i’m fairly simple when it comes to breakfast in the morning. it definitely can’t be sweet, and i almost always like it to be spicy. those are pretty much the guidelines. i find myself going back to avocados for breakfast in some way at least a few times a week, and as soon as my friend kelsey posted about her delicious and beautiful looking avocado and roasted walnut pasta, i knew i had to share my favorite breakfast. did you know avocados are a fruit? or that 1/5 of an avocado has 50 calories and 20 vitamins and minerals? did you know avocados are sodium and cholesterol free?

this recipe doesn’t really have a name, so we’re just going to call it
avocado, swiss and spinach on an english muffin
1 whole wheat english muffin
1/2 of an avocado 1 teaspoon lemon or lime juice
a small handful of spinach
half a slice of swiss cheese
sea salt & fresh ground pepper to taste
green chili hot sauce (optional)
toast the english muffin, and add the swiss cheese at the end of the toast cycle so that it melts. mash the avocado half, add the lemon or lime juice, the hot sauce and s & p, and layer on the english muffin with the spinach. and eat it like a sandwich. yum!
i’m so exciting i eat the same thing for breakfast everyday.

Sounds deeeelish! I usually always opt for eggs since I need that extra protein, but that could easily be added straight to this!
sometimes i add an egg….only if luke has time to make me one! i have a hard time making eggs over easy

I stumbled upon your blog last night and I, too, am a fellow Wichitan! Anyway, I love avocado toast for breakfast, especially in the summer. If you are looking for a hint of sodium, a pinch Lawry’s seasoned salt is delectable with avocado. I always add it to my guacamole, too. A little secret ingredient! Looking forward to following along with your blog!
