eat // moroccan couscous

hello and happy tuesday!
its always a good idea in this household to make some meals that allows for leftovers, the perfect thing for the two of us to pack in our lunches. and this 5 spice moroccan couscous is the perfect thing for lunch and dinner. we’ll be eating it all week!

5 spice moroccan couscous

1/4 cup peanut oil
1/4 teaspoon turmeric
1/4 teaspoon cinnamon
1/4 teaspoon ginger
1/4 teaspoon cumin
1/4 teaspoon cayenne
1 1/2 cup couscous
2 1/2 cups vegetable broth
1/4 cup orange juice (freshly squeeze is best!)
1 teaspoon light brown sugar
1 teaspoon salt
1/3 red onion, chopped
1/3 green pepper, chopped
1/4 cup dates, chopped
3 tablespoons fresh cilantro, chopped

heat 2 tablespoons peanut oil in medium sized sauce pan over medium heat. add the spices and the couscous and cook until fragrant. add the vegetable broth to the pan and cook until all of the liquid is absorbed. set aside. mix the rest of the peanut oil, orange juice, sugar and salt together and set aside. add the onion, green pepper and dates. pour the oil/orange juice mixture over the couscous and toss it all together. i enjoy this dish cold and warmed up.
